Coconut - Crusted Chicken

Sorry for the lack of recent posts; this past week seemed to fly right by me.  To make up for my absence, I wanted to share with you a delicious recipe I recently made.  The dish is called Coconut Chicken, which I found on my trust BHG recipe app.  You can find the full listing of ingredients here.  As you will see it is a simple recipe that I like to think is pretty healthy too.  The recipe has two separate parts.  The 1st part is to baste and coat the chicken with the coconut mixture (see below pics).  The second part is to make the mango salsa.  I will admit that due to time constraints we cheated and bought Whole Foods version of mango salsa, but as you will see on the recipe, the salsa is super easy to make.  Since this dish doesn't call for any sort of carb, we paired it with a kale salad.  Enjoy! xx
